Easter Hedgehog

My assignment for Easter lunch at my sister’s house was to bring the Easter Hedgehog! So, I started the process on Saturday evening, mixing the cream cheese and cheddar cheese with Old Bay, by hand.Seriously, I can not tell you how revolted I am mixing this by hand, but it takes about two minutes to do it, rather than mixing it in the Cuisinart. Once everything was mixed, I put it all on a plate and started forming the hedgehog.The one issue I had with a lot of the pictures of the cheese-hog, was that most people didn’t have a clue what a hedgehog looked like, and many of them had pig faces with snouts and big floppy ears. Unlike a hedgehog.I spent about an hour strategically placing the sliced almonds on the hedgehog, all whilst watching a movie on the computer. I found two of the almonds that had browned a bit more than the others and used them for ears. I used dried currants for the eyes and nose.

I chilled the cheese overnight and before I left for my sister’s house, I garnished it with a chiffonade of lettuce to resemble grass. I am not the only creative one in the family though! My nieces all showed off their creative sides with cupcakes,
